Indonasian salad


Ingredients for this exotic salad:

- a green lettuce, (can also be an iceberg lettuce)
- a red pepper
- a cup of cut ananas - best is to buy a fresh one
- 2 spring onions
- a few cashew nuts, if you like

The sauce:
3 spoons lemon juice
2 spoons oil (sunflower oil will do)
1 small spoon soy sauce
1 small spoon brown sugar
a littli bit chillie, ginger

Cut the ingredients. It looks nice when the pepper is cut in stripes. The pieces of ananas shouldn't be too large.

Mix the sauce in a separate little pot and then pour it over the ingredients.

It is an exotic, refreshing salad. It doesn't take a lot of time to prepare. In case you took iceberg salad, you are not forced to eat at once.

Add rice aside and you have a meal for lunch time.

Potatoes with a cucumber-tomatoe salad



I wanted to go out for dinner. But I am happy that I didn't go out. I had everything at home for a dinner:

The salad: I cut a tomatoe into wedges. I peeled the cucumber and cut it in very thin slices with a grater. I added salt, pepper, a little bit sugar, 2 tablepoons olive oil, 2 tablespoons white whine vinegaer, chives. Mix well. Finished.

Potatoes: I cooked potatoes. I put them in water and cooked them. I didn't peel it. I was too lazy and it is healthier to eat the skin if the skin is not too thick. To put the potatoes into the water was my first step, because it needs some time till the potatoes are soft.

I ate the potatoes with vegan margarine. It is a simple meal, but very good as well.

Hearts of artichockes, tomatoe and green peas



Just an idea for a hot day. I took a few hearts of artichockes. I cut a tomatoe, put salt and freshly grounded pepper on it. I took canned peas, drained them, put them in a little bowl, added salt, pepper, olive oil and balsamico. Finish. I toasted a white bread.

It is a quick meal for a hot day.

Take the time to arrange the food a little bit. The food and you are worth it.

Vegetables with rice - Thai style

Rice: I have a rice cooker and it is worth to have one. It makes cooking easier. I washed the basmati rice and put it into the rice cooker with enough water ( a little bit more than the double of the rice - 1 cup of rice, 2 cups of water i.e.). When the rice is ready the cooker keeps the rice warm. That's the advantage of such an instrument.

Ingredients:

Vegetables: 1 aubergine, 1 zucchini, 2 peeled tomatoes, 150 g mushrooms

For the sauce: 3 tablespoon sherry, 1 tablespoon brown sugar, 1 tablespoon soysauce, chille to taste, sunflower oil, 3 or more pieces of garlic, ginger

The springflowers are for garnishing everything.

Ho to do it?
First peel the tomatoes. Pour boiling water over it , wait a little bit and then peel it. It is easy. Cut the tomatoes into little pieces.
Secondly cut all the other ingredients into small pieces (see picture) as well.
Thirdly put oil into a pan, fry the garlic first. Then add the aubergine. It is necessary to add more oil as the aubergine soaks a lot of oil (after having cut the aubergine don't forget to give some salt on it). Fry the aubergine for a few minutes, add oil and even more oil if necessary, then add the other ingredients. Quickly add some water. 100 ml should be enough. And then simmer the vegetables. Add the ingredients for the sauce piece by piece. Stir well. When the vegetables are soft the meal is ready.

Tip: Add more tomatoes, water and spices when you like a lot of sauce.

It is a very tasty meal, even though the picture is a little bit boring. You will need some time for cutting all the ingredients. That's why I think it is something for Saturdays.

Just cherries - what a delicious dessert



It needn't to be complicated. Just cherries will do.

Potatoe salad with celery, capres and parsley


We had a glas of beer with it. Water is fine as well.
You can prepare the salad and you can eat it much later. The later you eat it the better it is.

Afterwards we had cherries, just cherries.

The salad is also very good when you are very hungry.

The ingredients:
potatoes, half an onion, 3 stalks of celery, 2 table spoon capres, parsley, 2 pieces of garlic,
vinegear, olive oil, salt, pepper, nutmeg, vegetable broth,

Cook the potatoes, then peel it and cut it. In the meantime cut the celery in thin slices, cut the parsley, cut the onion in very little pieces. Mix all the ingredients together. Pour the hot vegetable broth (75ml), oil and vinegear over it with all the spiced (salt, pepper, nutmeg). Always stir well.

Then wait as long as you can and want. Enjoy it.

Spaghetti with tomatoes, capres and olives


That is one of my favourite quick meals.

As you can see on the picture I still had a salad. I mingled the lettuce with olive oil, balsamico vineagre, salt and pepper. That's it. I offered the meal the German way: the salad comes with the main course at the same time.

Spaghetti: Put them in boiling water, with a bit of oil and salt. Within 12 minutes they might be ready. Take those spaghettis without eggs.

Sauce: Ingredients: tomatoes from a can (in summer I take fresh ones), garlic as much as you want, olives, capres, red wine, salt, pepper, chilli, vegetable broth, balsamico.

Put oil in a pan, add the cut garlic, simmer for a while. Then add the tomatoes, cut olives, capres, red wine, salt, pepper, a tea spoon vegetable broth and a shot of balsamico. Stir well.

In the meantime the spaghettis should be ready. I also think that the sauce was cooking for some minutes. It is ready now. Enjoy it.

The meal is good with a glas of red wine. If you have children substitute the red wine with water.

You can be sure that variations of the sauce will follow. It is sort of Italian. They have influenced my cooking a lot.

Broccoli with sugar beans and cashew nuts - a disaster




Please have a closer look at this broccoli.


The meal today was a disaster:

Here are a few hints:

1. I heard that my boyfriend went into the kitchen from time to time. He has a sweet tooth, I know this. But I didn't know that he had found the cashew nuts that I needed for my meal this evening. Hide the important ingredients so that family members cannot eat them before the meal.

2. In the meantime you might have found this worm on the broccoli. The broccoli was full of worms. And I wanted to prepare a vegan meal. I was so happy that I had my glasses on, so that I could see this hidden worms. Always wash vegetables properly.

3. I was sure I had cococut milk in my refrigerator. Before I use something, I always check the expiring date. I could read: Jan 2006. We have June now. I was lucky, because I found another coconut cream on my shelf. Always check if you have all ingredients that you need.

4. On Saturday my shopping activities were a little bit late. That meant, that I couldn't get fresh baby corns anymore. I decided to take the ones in a can. I drained it. But it smelled so awfully that I threw it away. Always go for fresh ingredients. It is so important..

The meal was boring. Only the red wine was good. We needed it to gulp down the broccoli. I won't post the recipe. Also the rice was not sticky but wet. So I'm not a professional, but adventurous.

The pictures are not in the right order, but you can see a certain development. I hope you had a better meal.

And now I have to clean the kitchen. Oh, no.

Salad: Frisee and pepper


Saturday is shopping day. After shopping I'm hungry, but too lazy to prepare something time-consuming.

Here is an easy salad:
You need a frisee lettuce, 2 peppers, 1 small onion, 2 spoons of olive oil, 2 spoons of estragon vineagre, salt and pepper to taste.

I ate it with a slice of bread with soy margarine.

How to do it: Wash the salad and cut it in little pieces, cut the peppers and the onion. Prepare the sauce. If you want to do it the good way prepare it in an extra pot and then pour it over the salad. I often use the quick way and put everything in the large bowl. It is very important to mingle everything carefully.

Easy and fresh. It is also a basic meal.

A sandwich with tomatoes
















The situation: I was very busy and I didn't like to spend much time on cooking:

I cut a few cocktail tomatoes and one large tomatoe. I gave salt and pepper on it. On the piece of bread I put soy margarine, vegan champignongs pastete and French Diijon mustard. After that light meal I had an Earl Grey tea with sugar.

Fast and vegan.
