Vegetables with rice - Thai style

Rice: I have a rice cooker and it is worth to have one. It makes cooking easier. I washed the basmati rice and put it into the rice cooker with enough water ( a little bit more than the double of the rice - 1 cup of rice, 2 cups of water i.e.). When the rice is ready the cooker keeps the rice warm. That's the advantage of such an instrument.


Vegetables: 1 aubergine, 1 zucchini, 2 peeled tomatoes, 150 g mushrooms

For the sauce: 3 tablespoon sherry, 1 tablespoon brown sugar, 1 tablespoon soysauce, chille to taste, sunflower oil, 3 or more pieces of garlic, ginger

The springflowers are for garnishing everything.

Ho to do it?
First peel the tomatoes. Pour boiling water over it , wait a little bit and then peel it. It is easy. Cut the tomatoes into little pieces.
Secondly cut all the other ingredients into small pieces (see picture) as well.
Thirdly put oil into a pan, fry the garlic first. Then add the aubergine. It is necessary to add more oil as the aubergine soaks a lot of oil (after having cut the aubergine don't forget to give some salt on it). Fry the aubergine for a few minutes, add oil and even more oil if necessary, then add the other ingredients. Quickly add some water. 100 ml should be enough. And then simmer the vegetables. Add the ingredients for the sauce piece by piece. Stir well. When the vegetables are soft the meal is ready.

Tip: Add more tomatoes, water and spices when you like a lot of sauce.

It is a very tasty meal, even though the picture is a little bit boring. You will need some time for cutting all the ingredients. That's why I think it is something for Saturdays.
