A classic and vegan breakfast

Coffee and a piece of bread with soy margarine and strawberry jam was my breakfast this morning. I like it sweet.

A winter salad

The ingredients: field salad, one red pepper and mushrooms.
For the sauce: Double as much olive oil than red wine vinegar and a tea spoon mustard au champagne.
Mix well and enjoy with bread.

Vegetables in white wine sauce with parsley

1 onion
1 garlic glove
olive oil
wine (I had a Pinot Grigot)
1 vegetable broth
freshly grounded pepper
6 stoneless black olives
1 bunch of parsley
6 small potatoes
1 red pepper
1 small zucchini

Boil the potatoes.

In the meantime cut the vegetables.

When the potatoes are soft, put the oil in a pan or wok, add the garlic and the onions. When the onions are glassy add the other vegetables (pepper, zucchini). Fry them for a few minutes and then add the wine. Be generous. Add so much that you have enough sauce. Add also a vegetable broth. Let it cook till it is soft to your taste. Add the olives. Then add the hot potatoes. I didn't peel them nor did I cut them. I like the skin of the young potatoes. Finally add the cut parsley and the freshly grounded pepper. Finished.
There is surely some wine left that you can drink with the meal. Enjoy.

A summer salad with coriander

I am hungry when I return home. I pass by a few grocery stores before I'm at home. I bought tomatoes and coriander. At home I cut the tomatoes added little green peas, pine nuts and the coriander. For the sauce I took olive oil, cidre vinegar, salt and pepper. Usually I use double as much oil than vinegar. I ate a dark piece of bread with it.Afterwards I had a vegan mousse au chocolate. I like to finish a meal with something sweet. As it is cold here, I will make a cup of tea now. That was it.I loved it, it was something fresh, it was quickly done and light. It needn't to be complicated.I am convinced if one likes to eat healthy, one must prepare meals for oneself.

Fresh mango with soy yogurt - a breakfast

It is delicious this simple breakfast. I bought a mango from Pakistan and put soy yogurt on it. Most of the time I mix it. I vary with the fruit, but mangoes are my favourite fruits. It is a simple vegan breakfast.

Bush beans - potatoe salad

It was good. I tried something new again. I would buy white bread now. It would be good to this salad.
The ingredients:
Bush beans (200 gr)
Potatoes (400 gr)
6 dried tomatoes
15 black or green olives without stones
half an onion

For the sauce:
2 spoons olive oil
1 spoon wine vinegar
2 spoon dry white wine
Vegetable broth (the recipe was wrong here) I added a little cup of broth, prepared it in pot
pepper, thyme.

I cut the beans, see picture. Then I boiled them in salty water. When soft I rinsed them under cold water. I cooked the potatoes with the skin, removed it when they were ready. I cut them into roles.

Then I put everything in a bowl and mixed everything. It was delicious.

Drink: Water or white wine
Dessert: White raisins.

A kidney bean, pea, red pepper salad

If possible I like to add something raw, something fresh. Fresh is the red pepper and the mushrooms in case I add those, too.

The ingredients:
Canned kidney beans,
Canned green peas,
Red pepper,
Mushrooms if wished.

For the sauce:
Olive oil, red wine vinegar, tarragon mustard (any mustard will do, hot mustard will be fine, no sweet mustard)
2 gloves of garlic, salt, pepper.

Take double as much olive oil than vinegar (2:1), a spoon full of mustard, be generous, add the garlic, salt and pepper, mix it in a bowl.

Then add the rinsed kidney beans and peas and cut red pepper (and mushrooms).

It is really quick done.
This salad is filling. It even tastes better the other day. Enjoy.

PS: On the picture you see my salad servers. I bought them in South Africa a few years ago. With them I meassure the oil and vinegre.

I took:
a half onion
3 gloves of garlic (I like garlic)
1 zucchini
1 red pepper
3 waxy and skinned potatoes
a handful olives
The sauce is made of white wine (a little bottle), vegetable broth (a cube), pepper, oregano, thyme, parsley.

How to do it? My cooking method is "mise en place". First I cut everything before I start cooking.

I started cooking the potatoes. I had none from the day before. When they were ready I skinned them. In the meantime I had cut the vegetables. First I put olive oil in the pan and added the onions and the garlic. I stirred it and let it become brown. then I added all the other vegetables, pepper, zucchini and potatoes. After a short while of stirring, I added the wine and let it simmer. I stirred and added the other spices and vegetable broth. When everything was soft, I added the parsley, stirred again one time. Ready. I think due to the spices - oregano and thyme and the white wine, this dinner had a French touch.

I am sure that I will cook this again. Loved it.

The dessert

The dessert was a cappuccino soy pudding. I only put it into a nice little bowl and added soy cream. Simple, too.
I just wanted to post a simple vegan meal, consisting of three courses. It is doable with not much effort.

The risotto

The risotto, the main course is more or less a convenient product. I only had to add vegetable broth, wine and water. Slowly of course. Then I had to stir and to stir and to stir. It tastes great and is simple to prepare, too.

A green salad

The sauce consists of olive oil, a white wine vineagre and dried, herbs and dried tomatoes. Simple.
