Simplicity


I prepared a similar meal like yesterday. Most people eat every day similar food. This is why it is important to think what it is that we eat on a daily basis. What we eat is a habit. Habits we can change.

Today I had 3 cocktail tomatoes, cucumber, mushrooms. For the dressing I used olive oil and white wine vinegar. I put basil on the tomatoes and a bit of salt (not necessary, it can also be pepper if you suffer from high blood pressure). The piece of bread was a pumpkin seed bread. I put sojola on it (vegan butter) and Gomasio (sesame seeds). Gomasio is rich in iron.

As dessert I had a mango soy yoghurt. I added a fresh apricot.

Yep, I drank red wine today. Water is always good.

I feel full now. I am sure that this food was healthy as it was fresh and raw. No restaurant offers me such a healthy meal, so cheap and quickly done.......

A frugal meal




Starter: I had a few radishes
Main course: cocktail tomatoes with basil, olive oil and balsamico as dressing with olive bread and sojola
Beverage: water, your favourite one. Mine is Pelligrini, the Italian water.
Dessert: caramel soy pudding. I always like something sweet at the end.

It may be simple.

White bean salad




Yep, my vegan lunch today. I was inspired by a vegan cook: Attila Hildmann. His books are only available in German language.

The salad: I bought canned white beans and rinsed them. I cut a red pepper. I also cut a red onion. For the dressing I used half a citron and 2 spoons of olive oil. I added pepper and garlic. Parsley was part of the recipe. It would have been good, but I was too lazy to go to another grocery store.
I had olive bread with it. Of course every other bread will do as well.

The dessert: I cut a banana and put vanilla soy pudding on it. Yeah, it can be that simple. I personally don't need a 5 star dessert every day, I want something sweet, that's it.

Cantaloupe


I was thirsty after the yoga practice. This cantaloupe filled me, it was juicy and delicious. Sometimes this can be enough for dinner.

Salad servers


South Africa in my life: I bought these salad servers in South Africa. I appreciate it very much as I can use it to meassure the liquids for the dressing. The huge spoon is deep enough to allow this easily. I usually take 2 spoons of oil and 1 spoon of vinegar. This relation is recommended, too much vinegar can spoil the salad.

Salad servers are a good present and absolutely necessary for those who want to eat healthy.

Tomatoes with olive bread and Gomasio

To eat vegan needn't to be difficult. There are many products on the market that taste wonderful. Gomasio is such a product. It is sesam seeds with salt. It's summer time and the tomatoes are juicy and tasteful.

I still have this mousse au chocolate that I made a few days ago. Any other dessert is good, too.

It's till cold. I enjoy a hot ginger tea, too.

Ratatouille with potatoes




It's French inspired. I wanted to cook a Ratatouille with baguette. But then I had to use garlic. As I have an interview tomorrow garlic is a no no. If I cannot use garlic we can eat potatoes aside I thought.

The Ratatouille:
1 onion, 1 red pepper, 1 zucchini, 1 aubergine, 3 tomatoes (peeled).
Herbs à la Provence, water, a small spoon of vegetable broth.

First I fried the onion in olive oil. Then I added the other ingredients poured water to it. I let it simmer till it was soft. In the meantime the potatoes were ready as well.
I admit, I wanted ketchup for the potatoes.

Next time I add garlic to it, I will eat it with baguette and a glass of Rosé.

The mousse au chocolat (see recipe last post) was heavy. I could only eat a bit. It's not sweet, but I like it. E only took a spoon.

Mousse au chocolat

I couldn't resist, I had to taste the mousse au chocolat this moring. I had prepared it yesterday. It should be the dessert after the Ratatouille. But then we ate out.
I took a table spoon and tasted. I think it is good, a bit hard perhaps, not really sweet, something for grown-up people.
A mousse au chocolat does not need decoration.

How I did it:
I bought dark chocolate (70% cacao) 150gr, 1 box silken tofu, 3 table spoon rum (80%), 3 table spoon sugar and a vanille sugar.

I put everything in the blender except the chocolate. The chocolate I made liquid in a bain de mari, then I gave it to the other ingredients in the blender. I mixed everything and put it in dessert bowls. In the fridge it should cool down. The chocolat would become hard again, a bit too hard.
Next time I'd take a bit less chocolat and a bit more sugar. This will make the dessert softer. It's all experience. The dessert does not taste vegan, it has a strong chocolate taste.

Bain de mari

Only when you are a chocolate lover you need such a bain de mari. I put it on a pot with water which I heat. That way I can melt chocolate, that I can use for mousse au chocolate.



Breakfast

The dough of the "Laugenstange" is without egg or milk or other animal products. For butter it is easy to find a substitute. I use sojola. I have still jam at home. Today I drink Earl Grey, one of my favourite teas.

Summer vegetables

From June till the mid of September it's summer time. Almost everything is available on the markets.

It's the best time for:
Tomatoes, zucchini, pepper,
artichocke, aubergine, basil, chauliflower, broccoli, green beans,
carotts, garlic, red beet..........

to mention a few vegetables.

Time to study my cooking books. It's weekend and I will cook something..........

Salad spinner

The simplier the better, but a few kitchen utensils are necessary. I don't want to miss my salad spinner anymore. To eat healthy, means to eat salads (raw). A salad spinner helps enourmously to dry the lettuce leaves. Salad can be stored there, too. The water on the floor helps to keep the lettuce leaves fresh.

Breakfast

I need a breakfast. Even when I practice yoga in the morning I eat something a few hours earlier. Food wakes the body up. Today I had a small banana with soy yogurt. And coffee, coffee............

Penne al'arrabiata


This is my favourite meal in Italian restaurants: penne al'arrabiata. It is usually also vegan. The noodles are made of durum wheat (and not egg noodles). The sauce is hot, but consists of tomatoes, olive oil, onions, garlic and chili.
Some restaurants give parmesan on it. Then this meal is no more vegan. In restaurants tolerance is needed if one wants to be vegan.

Appel strudel


E stopped at my parents home on his way to Munich when he came from the north of Germany yesterday. My mother sent me an apple strudel. It consists mainly of apples. If the dough is 100% vegan I don't know. It was good and my breakfast this morning.

Perhaps this blog becomes a proof that it is easy to eat vegan.

I prepared a salad for myself: green lettuce leaves, a few mushrooms and tomatoes and fresh basil leaves. The dressing was French inspired: olive oil, red wine vinegar and hot mustard. I poured the dressing over the ingredients. (It's probably better to mix.)
I had bread to the salad (carbohydrates).

Dessert: Blueberries with vanilla soy pudding. The variations with this soy pudding and fruit are endless.

This little menu is prepared very quickly. It was delicious.

Fresh fruit are always better than canned ones.
There are good vegan  puddings on the market.

Thyme

On the picture fresh thyme can be seen. I just returned from my little balcony. The thyme smells so intensively. At least during summer times I am so lucky that I can use fresh thyme.

I use thyme for French meals, like Ratatouille.
I also like to drink thyme tea. It is medicine when having belly cramps......

Chantarelles

Chantarelles, 1 onion, a lettuce, a few tomatoes.
Olive oil and balsamico for the dressing for the salad.

I fried 1 cut onion in a pan, added the chantarelles. When they were soft, I poured soy sauce over it. Heated it and gave everything over the salad. Voilà.

Hungry

Suddenly I was very hungry. I needed something to eat - at once. I made a sandwich for myself. I had vegan spread at home. Afterwards I had raspberries and strawberries with soy chocolate pudding.

Somtimes the stomach wants something fast.

Kiwi


They look like a small potato from the outside. Inside they are most beautiful. I write about Kiwis. It is said that they are rich in vitamin C. It's one of my favourite fruit.

Light summer lunch



It's warm here now, a real summer day, 28° Celsius. I don't want to eat warm anymore.
A salad is perfect for hot days.

Three ingredients are usually enough to prepare something exciting: I took rucola, a red pepper and mushrooms. The dressing existed of olive oil and white wine vinegar. (Take double as much olive oil than vinegar). I had 2 slices of olive bread with it.
Beverages: water.

Dessert: I cut strawberries. Then I put soy chocolate pudding over it that I had bought yesterday. It's worth to decorate a bit. The eyes also want to see a beautiful meal. I put 1 strawberry on top.

Yeah, I loved it and I feel full. It's an easy and quick meal.

Fennel apple salad

1 fennel
1 sweet-sour apple (important)
fresh dill
Olive oil, double as much as rice vinegar (I used my salad cutlery to measure it).
Half a citron
Chili

I cut fennel and apple in very thin slices. I used a grater. Then I added the other ingredients. Ready.

And how to make a meal out of it: Water or white wine fits best. I had olive bread with it.
As a desert dried pineapple are good, or a vanilla soy pudding.
