Christmas meal

Avocado with Carribean pineapple-ginger-salsa


Ingredients: 
1 avocado

For the salsa:
- half a pineapple
- 1 yellow pepper
- 1 tan corn

The dressing:
3 spoons of a nut oil,
the juice of half a citron
coriander, ginger, pepper, chili.

Mix the ingredients with the dressing. Put half an avocado on each plate and give the dressing over it. It's a fresh summer dinner, and due to the avocado it's also filling.

It can also serve as a starter, why not.

I modified this recipe a bit as I had no nutmeg at home. The recipe is found in the book "Vegetarisch vom Feinsten" by Bettina Matthaei.

Summer lunch



Just forgot the name of the vegan restaurant where I had this lunch. It was delicious. We've so much more choices when we want to eat vegan like a few years ago.

1.Main course: potato-cucumber salad and a green salad with vegetable something and mushroom sauce.
2. Dessert: coconut pana cotta......:)

Mango breakfast


Breakfast means break the fast. When we sleep we don't eat, it can be considered as a tiny fast. It makes sense to break the fast with tiny meal, a fruit for instance. It's mango season and for the time being I enjoy my daily mango. It has a lot of magnesium, it's juicy, simply very delicious.

A potato salad


A potato salad with white balsamico dressing, arugula on top and cocktail tomatoes around. I had this in a restaurant. It's a good idea. Potatoes are good carbohydrates. It's a salad that makes really full, it's something for the hungry days.

Green beans with ginger and a dessert


These are green beans with half an onion and grounded ginger and soy sauce. First cook the beans not too soft. In the meantime fry the onion in olive oil. When the beans are soft enough put them to the onions. Add the ginger and pour light soy sauce on it. Voilà.
(PS: I ate two thin pieces of baguette with it.)


It's a fresh pineapple with caramel pudding and a strawberry (because I still have a few at home). Be creative.

A classic lunch, salad and a sandwich



Mustard, my new passion. I mix it with the salad sauce and I put it on my sandwich. This is a classic lunch, a quick one: a German bread with soy margarine and a vegan spread. I prepared a simple salad with lettuce, red pepper, cocktail tomatoes and cucumber.

Yesterday I had vanilla pudding with rasperies.

When saying that I'm vegan, many people ask: And what do you eat?
The alternatives to meat and milk products are numerous.

Noodle salad


And the next day I prepared a noodle salad with the remaining noodles.

Ingredients:
- a celery stick
- mushrooms
- a red pepper
- an apple
- green peas

The dressing consisted of olive oil red wine vinegar, mustard. Enjoy.

Couscous, my New Years Eve dinner


Ingredients:
1 onion
3 gloves of garlic
3 peeled potatoes
3 carrots
1 red pepper
1 zucchini
2 large and peeled tomatoes
1 tan chickpeas

Spices for the sauce:
1 teaspoon coriander
1 teaspoon cumin
Half a teaspoon curcuma
1 and a half teaspoon vegetable broth
pepper to taste
2 teaspoons Harissa (makes the sauce hot)

Garnishing:
Fresh parsley

The couscous aside needs one and a half minute till ready. This can be done when everything is ready.

I first cut all the ingredients into pieces (not too small). I put the potatoes into water so that they don't get dark.
I put oil in the pan and fry the onions and garlic. Spices can be added after a while. Then I add the other ingredients. I pour enough water to the vegetables and then I let them simmer till soft. It takes about 20 min not longer.

Ready. Enjoy.
