Avocado with Carribean pineapple-ginger-salsa

1 avocado

For the salsa:
- half a pineapple
- 1 yellow pepper
- 1 tan corn

The dressing:
3 spoons of a nut oil,
the juice of half a citron
coriander, ginger, pepper, chili.

Mix the ingredients with the dressing. Put half an avocado on each plate and give the dressing over it. It's a fresh summer dinner, and due to the avocado it's also filling.

It can also serve as a starter, why not.

I modified this recipe a bit as I had no nutmeg at home. The recipe is found in the book "Vegetarisch vom Feinsten" by Bettina Matthaei.
