Salad with zucchini


A simple meal, my creation. I prepared a salad with field salad, a tomato and a red pepper. The dressing can vary. I took red wine vinegar, a nut oil and Dijon musturd.

I fried the zucchini.Then I put it on a paper, so that the oil would be absorbed by it. I salted it. Done.

Breakfast as usual: Fruit with soy yogurt, "popped Amaranth", few nuts
Lunch: Bread and spread
Dinner: We were out in an Italian restaurant.
- The starter was simple. It was something fresh. At home my vinegar is much better. It was a bit sour there.
- The main course was with vegetables. It was all very oily. The noodles swam in olive oil. If one cooks by oneself, one becomes critical.

Day 3




I had planned to try something new from the cooking book by Attila Hildmann, the most famous vegan cook in Germany. It was an adventure to find the ingredients. I got everything. But I don't want to throw away vegetables or lettuce. At home I changed my mind. I cut what was in the fridge: carrot, celery stick, tomatoes, mushrooms. I had still this sauce from yesterday and topped the salad with it.

As dessert I had this vanilla pudding, not self-made. It's always a fast solution for a dessert.

On my way home I had stopped at a restaurant to sit outside. The weather was too good and I wanted to write my journal. I was hungry due to my shopping spree and ate a bruschetta. It's vegan. When I saw it, I realized why it was not good to order it. It's recommended not to eat white bread during the 30 days. Last but not least I'm flexible. I always search for solution that are simple, practical.

I'd say: day 3 of my "30 days vegan challenge" was a success, too.

Day 2

My lunch today. It can be easy to eat vegan. 


This is my free style starter, a salad. I looked what was in the fridge. I had tomatoes, rucola lettuce, a celery stick, a carrot, mushrooms. I couldn't use up everything. I put the ingredients on the plate and spiced it up with bit of salt and pepper. Sesame oil and cranberry balsam vinegar was the dressing.

It's good advice to have different oils and vinegars at home.



Yesterday the book by Attila Hildman "Vegan for fit" arrived. I had to test this recipe and it was so delicious.

I cut the broccoli and put it in a pan with water to boil it. It lasts only about 4 minutes till it's soft.
Very special is the sauce. For 1 person it's 60 gr almond mush, half a citron, 40ml still mineral water, salt, pepper.
Attila added roasted almonds that he cut after roasting. And he added 2 chilies. I had no chillies at home and this was OK, too.

Finally I know how to eat my broccoli. This sauce makes this meal very very good.

The sauce is filling and delicious.

Day 1


Mmmmmm, must adjust this recipe. We prefer lighter salad dressings. The avocado as dressing was too thick. The ingredients are a perfect combination. Will work on this recipe.

Dinner for one


It's asparagus time.
It's strawberry time in June.

The dressing is interesting, Asian inspired:
1 garlic clove
2 spring onions
2 spoons rice vinegar
1 spoon soy sauce
2 table spoon brown sugar
1 spoon peanut oil
2 table spoon sesema oil

I put some cocktail tomatoes next to the green asparagus. It's for the eyes.

Dessert: Strawberries with chocolate soy pudding.

It's a astute, simple and delicious.

French-Arabic dinner


This was a vegan dinner in a French restaurant.

I had tabouleh, artichoke in a spicy sauce and hummus. It came with good French bread.

It's indeed an idea for a dinner if one wants to prepare something in advance.

This is mirinda. I saw it at my vegetable and fruit dealer's shop and I had to taste it. It tastes like a tomato only more intensive. It's a very good vegetable, not that cheap.

A first healthy breakfast.


An apple, soy yogurt, different nuts, that was my healthy breakfast. It was a good start in the year 2012.

To drink first a glass of water is indeed also a very good habit.
